Skirret

Skirret  (Sium)

Skirrit (Sium) is a genus of umbellifers. Skirrit does well in all types of soil and prefers a spot in the sun. Light partial shade is also tolerated. During flowering, the plant attracts many insects. The Skirrit genus has many species, but in particular the roots of Sium sisarum have been harvested for centuries for their sweet taste. After the foliage of the plant has died in the fall, part of the roots can be cut from the plant. Do this when you want to use them, not before as they may dry out. The carrots are comparable in taste to Parsnips but are much sweeter. Skirrit roots are also great to eat raw.
